The experience commenced with a striking demonstration of Japanese sushi craftsmanship, seamlessly integrated into the restaurant’s broader artistic ethos. The Maki Selection served as an exquisite opening, featuring a classic pairing of salmon and velvety avocado was elevated through immaculate rice temperature and seasoning, while the spicy tuna offered an exhilarating kick balanced by subtle acidity. The standout of the maki ensemble, however, was the seared hamachi, where the delicate application of flame rendered the rich yellowtail endlessly buttery, imparting a whisper of smokiness that lingered beautifully on the palate.
This mastery extended effortlessly into the Nigiri Selection, a showcased array of pristine, glistening seafood that celebrated the pure essence of the ocean. Each morsel was a study in knife work and balance. The akami provided a deep, mineral richness characteristic of top-tier tuna loin, while the raw hamachi melted seamlessly, offering a luxurious, fatty sweetness. These were accompanied by exquisitely clean and vibrant salmon, remarkably delicate ama ebi bursting with natural sweetness, a firm and pristine sea bass and a scallop that was impossibly tender, practically dissolving into a wave of marine elegance. Directly contrasting these purist offerings were the ‘KFC’ Sushi Rolls, a clever, spirited nod to Korean Fried Chicken culture reimagined through the lens of high-end sushi. Delivering a spectacular crunch, a harmonious interplay of lingering spice and a rich, deeply savoury profile, this course proved that JANG possesses a playful soul beneath its formal refinement.
While the opening acts set a high standard, the undisputed centrepiece was the grandiose Jang Feast. Presented with theatrical flair, this expansive spread revolved around the primal power of the open flame, bringing together three premium proteins cooked to utter perfection. The duck breast was rendered with exceptional skill, yielding a crisp, golden skin alongside perfectly pink, tender meat that radiated a deep, gamey richness. Beside it lay the spicy gochujang rack of lamb, which was succulent, aromatic and deeply infused with the sweet-and-spicy complexity of fermented Korean chili paste, its charred edges providing a delightful bitterness that cut through the lamb’s natural richness. Completing this carnivorous triad were the gochujang tiger prawns, plump, sweet and bursting with smoke from the grill, each coated in a glistening lacquer of gochujang glaze.
This magnificent bounty was anchored by bowls of pristine, fluffy white rice, a crisp and refreshing seaweed salad and an exceptional geotjeori kimchi salad. This fresh, lightly seasoned unfermented kimchi offered a vibrant, herbaceous crunch to cleanse the palate between rich bites. T

Diners are invited to enhance their cuts of meat with an utterly addictive doenjang butter fusing rich dairy and earthy fermented soybean paste, or a bright, herbaceous chimichurri adding an unexpected South American zest. Further depth was provided by a punchy, vibrant Korean spicy hot sauce, a thick and umami-loaded ssamjang and the timeless, understated combination of Maldon salt suspended in toasted sesame oil. Dipping, wrapping and combining these sauces with the smoky meats and fresh salads created an endlessly dynamic dining experience where no two bites were ever the same.
To close a banquet of such grand proportions requires desserts of remarkable clarity and balance and our trio of iced confections delivered precisely that. The pear and lime sorbet offered an electric, citrus-infused brightness that instantly revived the palate, while the fig sorbet brought a deeper, autumnal sophistication, capturing the subtle, honeyed earthiness of ripe fruit. Finally, the Kirsch ice cream provided a luxurious finishing touch, offering a rich, velvety cream infused with the warm, cherry-laden notes of fine spirit.
